I've just built a new A&C bungalow and installed red oak floors with mahogany inlay. I applied 4 to 6 coats of Watco natural oil and they look fantastic. I have been told that urethane/varathane eventually wears and must be stripped to refinish. With oil, just add another coat every year or so.
good luck.
